LYNN’S ROASTED CHICKEN CHILI

WINNER of 2013 Chili Cook-Off!

Ingredients:
  • 1 1/2 cups chicken stock (not  broth) + a little extra*
  • 3 tbsp canola oil or melted butter
  • 1 large sweet onion (finely chopped)
  • 2 large garlic cloves (finely chopped)
  • 2-4 dashes of chipotle hot sauce (depending on how much heat you want)
  • 2 tbsp tomato paste
  • 1 whole seasoned and roasted chicken, de-boned and shredded and cubed (I omit the leg meat)
  • 3 cans of great northern beans (rinsed and well drained)
  • 1 can of diced tomatoes (drained)
  • 1 small can of medium fire roasted green chilies
  • ¾ tsp ground cinnamon
  • 1 tsp agave nectar
  • 2-3 tbsp cream cheese
  • Shredded Mexican cheese
  • Sour cream
  • Avocado (chopped finely)

Mix the spices in a small bowl and set aside. Turn on your slow cooker to high heat. Heat chicken stock in the microwave for 1 minute.  Put hot stock in slow cooker.

In a large sauté pan on medium high heat, cook the onion in the oil/butter until just turning brown (about 10 min).  Add garlic and sauté for about 3-5 minutes longer.  To the pan, add the shredded chicken and seasoning mix. Mix well and deglaze with additional chicken stock*…just enough to incorporate and thicken.

Add the chicken mixture to the slow cooker, followed by the beans, tomatoes, tomato paste, green chilies, cinnamon, agave and hot sauce.

Cook on high for 1 hour, then reduce to low for an additional 3-4 hours.

Shortly before serving, add the cream cheese and mix well.

Serve – top each bowl with cheese, then sour cream and avocado.

Serves 6 or more.

2010 Sur La Mer - Bordeaux Style Blend

Sur La Mer means "on the sea" in French and is a reference to the romantic seaport city in France where Leslie was born. Beautifully refined this Merlot dominant Bordeaux style blend uses all 5 of the Bordeaux varietals to create complexity and interest. Well integrated flavors of red fruit, black tea, cinnamon & baking spices create an elegant wine with lingering flocal notes in the finish.

2010 2 Spires - Syrah/Cabernet Sauvignon Blend

The name 2 Spires refers to the two wines that make up this bold and expressive blend of 65% Syrah and 35% Caberenet Sauvignon. Intensely flavorful with layers of dark fruit and mixed wild berries, this wine is well balanced and dense on the palate with powerful concentration. The use of larger puncheon barrels allows the subtle integration of oak while preserving the freshness and purity of the fruit.

2010 Cabernet Sauvignon

The 2010 Cabernet starts with aromas of fresh red fruit and rose petals with juicy raspberry and cassis flavors and an undelying hint of chocolate mocha. Well balance with sweet oak and well integrated tannins this wine is beautifully well rounded and ready to drink now or add to your cellar for additional aging.

Our flagship Viognier has beautiful aromatics of fresh pear and honeysuckle. What follows are rich peach flavors and citrus with enough acidity to keep the wine fresh and lively. A lovely summer sipper that is excellent with creamy cheese and foods with a dash of asian spice

2010 SYRAH

Our Syrah consistently displays the balance between the smoke and spice qualities we love, complimented by the rich flavors of black cherry and sweet tobacco from this vintage.  Medium bodied we add Viognier clusters during fermentation to provide lifted floral notes to the aromatics and intensify the deep ruby color.  100% Red Willow Vineyard Syrah.  154 cases; $32/bottle

2010 Malbec

Once again we found this wine to be so good on its own we left it 100% Malbec.  From Gamache Vineyards, these 10 year old vines exhibit the classic vineyard characteristics with a big expressive nose. Brambly fruit, floral violet notes with black pepper so often found in Malbec. Full bodied in the mouth but still clean and bright with a lifted finish.  212 cases; $32/bottle
