WINNING RECIPE

Merlot Chick's Spicy Chicken Chili

DIRECTIONS:

  • Boil chicken in broth until tender and fully cooked set aside to cool (save broth)
  • Sauté in a large pan the peppers, onion & chorizo in a little grapeseed oil
  • Shred the cooled drained chicken breasts, dice the thighs
  • In a large saucepan mix chicken, sautéed ingredients & Chili mix; season to taste with spices
  • Add can of diced tomatoes wine and broth (amt depends on how thick you like your chili)
  • Simmer for a minimum of 2 hours stirring occasionally or place in crock pot for the day on low (add liquid as needed)
  • 1 hour before serving add chocolate, stir till melted
  • Add fresh salsa of choice stir in gently

SPECIAL RECIPE

Italian Tortellini Sausage Soup

14 oz. can crushed tomatoes with basil  and garlic

14 oz. can Muir Glen Organic Fire Roasted Diced tomatoes

6 oz tomato paste (as needed)

16 oz Chicken broth

5 – 6 cloves garlic sliced

1 Tbl dry Italian Herb seasoning

1 medium onion medium chop

3 Tbl olive oil

½ tsp red pepper flakes (optional)

1.5 pounds Italian sausage

(medium or mild)

1 package Tortellini

Fresh Spinach Leave (optional)

Salt & pepper to taste.

Add olive oil to hot skillet, brown sausage 5-6 minutes and cut into medium size pieces. Remove and set aside.  Brown onion and garlic.

In large kettle add olive oil, both cans of tomatoes and chicken broth.  Add onions and garlic to mixture. Add sausage, herbs and red pepper flakes.  Add tomato paste until desired thickness is achieved or more tomato sauce or chicken broth if too thick.

Simmer for 30 minutes.  Salt and pepper to taste.   Serves 8-10

Serve with salad and warm bread.

White Lie is our first Pinot Gris and continues our love of aromatic white wines. This light and delicious lively wine starts with ripe green apple with hints of lemon peel and floral. The soft mouth feel and smooth finish would be great pairing for creamy cheeses and rich seafood.  Only 112 Cases produced; $14/bottle

2008 Sur La Mer – Bordeaux Style Blend

We named our Bordeaux blend Sur La Mer which means “on the sea” after the seaport city of La Rochelle in western France where Leslie was born. This classic Bordeaux blend consists of 43% Merlot, 25%Cabernet, 17%Cabernet Franc, 12%Malbec, 3% Petit Verdot. Black cherry, Chocolate and smokey oak fill the nose of this elegant, supple texture Bordeaux blend. Aged for 18 months in French oak and an additional 12 months in the bottle.

2009 Malbec

Our 4th vintage and again sourced entirely from Gamache Vineyards, one of the oldest and most respected vineyards in the state.  These 10 year old vines are some of the oldest Malbec vines to be found in Washington. Full bodied with beautiful blue and black fruit flavors that balance the smoke & the spice in the finish.  This wine has a character and intensity that will only deepen as the wine ages.   180 cases; $30/bottle

2008 2 SPIRES

2 Spires stands for our two wine blend of Syrah & Cabernet Sauvignon. The 2008 vintage features the lush fruit of Stillwater Creek Vineyard Syrah along with the bold and flavorful Chandler Reach & Dineen Vineyard Cabernet.  This is our boldest & biggest wine that displays a dark magenta and violet color.  Jammy raspberry & blackberry fruit fill the nose along with licorice and spice.  The toasty oak brings vanilla & caramel flavors that match the big fruit & spice of the nose while retaining a soft mouthfeel.  Full bodied with good grip & powerful concentration this wine remains well balanced and expressive throughout the finish.

2008 SYRAH

This 100% Syrah is sourced from three premium vineyards: Dineen Family, Red Willow and Stillwater Creek.  The blend of fruit from these vineyard sites lends complexity to the wine - inky and dark, filled with aromas of wild blackberry, sweet pipe tobacco and baking spices.  The 2008 vintage Syrah was co-fermented with whole Viognier clusters to add a lifted, floral note to the nose and to intensify the deep purple color. This leads to an elegant, yet mouth filling Syrah that has well-integrated tannins and a lengthy finish.  196 cases produced; $26/bottle

The 2007 Cabernet is 90% pure, silky Cabernet fruit from three of our favorite vineyards and 10% deep purple Petit Verdot. The combination is pleasingly structured and full on the palate. Loaded with flavors of blackberry, black current, roasted coffee, & clove with well integrated oak and structured tannins. Drink now or cellar to enjoy for up to eight years.

We are pleased to donate a portion of the proceeds from this wine to the research fund named in honor of our dear friend Molly Baber.  The funds will be used for basic research at the Scripps Research Institute to help those living with diabetes & organ transplants.   $29/bottle; 250 cases produced;
